Ingredients:
- 1 pound (454g) large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 tablespoons blackened seasoning
- 1 tablespoon lemon juice, freshly squeezed
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Pinch of cayenne pepper (optional)
- Salt and black pepper to taste
- 1 pound (454g) asparagus, trimmed
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1/4 cup chicken broth or white wine
- 1 tablespoon butter
- Lemon wedges, for serving
- Fresh parsley, chopped, for garnish
Instructions:
- In a mixing bowl, toss the shrimp with 2 tablespoons olive oil, blackened seasoning, lemon juice, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper. Ensure shrimp is evenly coated.
- Heat the skillet over medium-high heat until smoking hot. Add the seasoned shrimp in a single layer (work in batches if necessary). Cook for 2-3 minutes per side, until blackened and cooked through. Remove shrimp from skillet and set aside.
- Add 1 tablespoon olive oil and minced garlic to the same skillet. Sauté for 30 seconds, until fragrant.
- Add the trimmed asparagus and chicken broth or white wine to the skillet. Cover and cook for 3-5 minutes, or until asparagus is tender-crisp.
- Stir in the butter until melted and coats the asparagus. Season with salt and pepper to taste.
- Add the blackened shrimp back to the skillet with the asparagus. Toss gently to combine. Serve immediately with lemon wedges and a sprinkle of fresh parsley. Enjoy your Blackened Shrimp and Asparagus Skillet!
