  • 2 tablespoons olive oil
  • 2 tablespoons blackened seasoning
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Pinch of cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1 pound (454g) asparagus, trimmed
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/4 cup chicken broth or white wine
  • 1 tablespoon butter
  • Lemon wedges, for serving
  • Fresh parsley, chopped, for garnish

Instructions:

  1. In a mixing bowl, toss the shrimp with 2 tablespoons olive oil, blackened seasoning, lemon juice, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper. Ensure shrimp is evenly coated.
  2. Heat the skillet over medium-high heat until smoking hot. Add the seasoned shrimp in a single layer (work in batches if necessary). Cook for 2-3 minutes per side, until blackened and cooked through. Remove shrimp from skillet and set aside.
  3. Add 1 tablespoon olive oil and minced garlic to the same skillet. Sauté for 30 seconds, until fragrant.
  4. Add the trimmed asparagus and chicken broth or white wine to the skillet. Cover and cook for 3-5 minutes, or until asparagus is tender-crisp.
  5. Stir in the butter until melted and coats the asparagus. Season with salt and pepper to taste.
