Ingredients:

  • 4 large russet potatoes (approximately 8-10 oz / 225-280g each)
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon kosher salt (5 ml)
  • ½ teaspoon black pepper (2.5 ml)
  • Optional: ½ teaspoon garlic powder (2.5ml)
  • Butter
  • Sour Cream
  • Cheddar Cheese
  • Chives
  • Bacon Bits

Instructions:

  1. Preheat oven to 400°F (200°C). This high heat is crucial for crispy skin.
  2. Wash and scrub potatoes thoroughly. Pat completely dry. Prick each potato several times with a fork - this is non-negotiable!
  3. In a small bowl, whisk together olive oil, salt, pepper, and optional garlic powder. Rub the mixture all over the potatoes, ensuring they are evenly coated.
  4. Place seasoned potatoes directly on the baking sheet, leaving space between them. Bake for 1-1.5 hours, or until potatoes are easily pierced with a fork and the skin is crisp.
  5. Remove potatoes from oven and let them rest for a few minutes. Slice open lengthwise, fluff the inside with a fork, and add your favourite toppings. Serve immediately.
