Ingredients:
- 4 large russet potatoes (approximately 8-10 oz / 225-280g each)
- 2 tablespoons olive oil (30 ml)
- 1 teaspoon kosher salt (5 ml)
- ½ teaspoon black pepper (2.5 ml)
- Optional: ½ teaspoon garlic powder (2.5ml)

Instructions:
- Preheat oven to 400°F (200°C). This high heat is crucial for crispy skin.
- Wash and scrub potatoes thoroughly. Pat completely dry. Prick each potato several times with a fork - this is non-negotiable!
- In a small bowl, whisk together olive oil, salt, pepper, and optional garlic powder. Rub the mixture all over the potatoes, ensuring they are evenly coated.
- Place seasoned potatoes directly on the baking sheet, leaving space between them. Bake for 1-1.5 hours, or until potatoes are easily pierced with a fork and the skin is crisp.
- Remove potatoes from oven and let them rest for a few minutes. Slice open lengthwise, fluff the inside with a fork, and add your favourite toppings. Serve immediately.
