Ingredients:
- 5 cups (115g) Rice Krispie cereal (or other crisp rice cereal)
- 1 ½ tablespoons (8g) Thai tea mix, finely ground
- ¼ cup (57g) unsalted butter
- 10 ounces (283g) marshmallows, about 6 cups mini marshmallows
- ⅛ teaspoon (1g) salt
Instructions:
- Grease an 8x8 inch baking pan lightly and line with parchment paper, leaving an overhang for easy removal.
- Pour Rice Krispie cereal into a large bowl.
- Grind Thai tea mix into a fine powder using a spice grinder or mortar and pestle.
- Melt butter in a large saucepan over medium heat. Add marshmallows and stir constantly until almost completely melted.
- Remove from heat. Add ground Thai tea and salt to the melted marshmallow mixture. Stir until smooth and uniformly orange.
- Pour the Thai tea marshmallow mixture over the Rice Krispie cereal. Gently mix until the cereal is evenly coated.
- Transfer the mixture to the prepared baking pan. Press firmly and evenly into the pan using the back of a spatula or your hands (lightly greased or dampened to prevent sticking).
- Let cool for 5 minutes before slicing into bars and serving.
