Ingredients:

  • 5 cups (115g) Rice Krispie cereal (or other crisp rice cereal)
  • 1 ½ tablespoons (8g) Thai tea mix, finely ground
  • ¼ cup (57g) unsalted butter
  • 10 ounces (283g) marshmallows, about 6 cups mini marshmallows
  • ⅛ teaspoon (1g) salt

Instructions:

  1. Grease an 8x8 inch baking pan lightly and line with parchment paper, leaving an overhang for easy removal.
  2. Pour Rice Krispie cereal into a large bowl.
  3. Grind Thai tea mix into a fine powder using a spice grinder or mortar and pestle.
  4. Melt butter in a large saucepan over medium heat. Add marshmallows and stir constantly until almost completely melted.
  5. Remove from heat. Add ground Thai tea and salt to the melted marshmallow mixture. Stir until smooth and uniformly orange.
  6. Pour the Thai tea marshmallow mixture over the Rice Krispie cereal. Gently mix until the cereal is evenly coated.
  7. Transfer the mixture to the prepared baking pan. Press firmly and evenly into the pan using the back of a spatula or your hands (lightly greased or dampened to prevent sticking).
  8. Let cool for 5 minutes before slicing into bars and serving.
