Ingredients:

  • 1.5 lbs (680g) boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 large egg, lightly beaten
  • 1/2 cup (60g) cornstarch
  • 1/4 cup (30g) all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil, for frying (about 2 cups / 480ml)
  • 2 tablespoons (30ml) vegetable oil
  • 4 cloves garlic, minced
  • 1/4 cup (60ml) honey
  • 1/4 cup (60ml) soy sauce
  • 2 tablespoons (30ml) rice vinegar (or apple cider vinegar)
  • 1 tablespoon (15ml) ketchup
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes (optional)
  • Sesame seeds (optional)
  • Chopped green onions (optional)

Instructions:

  1. In a bowl, combine the chicken cubes with salt and pepper.
  2. In a separate bowl, whisk together egg, cornstarch, and flour.
  3. Dip each chicken piece into the egg mixture, ensuring it's fully coated.
  4. Heat vegetable oil in a large skillet or wok over medium-high heat.
  5. Carefully add the chicken pieces to the hot oil in a single layer, being careful not to overcrowd the pan. Fry for 3-4 minutes per side, or until golden brown and cooked through. The internal temperature should reach 165°F (74°C).
  6. Remove the chicken from the skillet and place it on a plate lined with paper towels to drain excess oil.
  7. In a clean skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the minced garlic and sauté for about 30 seconds, until fragrant.
  8. Stir in the honey, soy sauce, rice vinegar (or apple cider vinegar), ketchup, sesame oil, and red pepper flakes (if using).
  9. Bring the sauce to a simmer and cook for 2-3 minutes, or until it thickens slightly.
  10. Add the fried Honey Garlic Chicken Bites to the skillet with the honey garlic sauce and toss to coat evenly.
  11. Sprinkle with sesame seeds and chopped green onions (optional). Serve immediately.
