Ingredients:
- 1.5 lbs (680g) boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 large egg, lightly beaten
- 1/2 cup (60g) cornstarch
- 1/4 cup (30g) all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Vegetable oil, for frying (about 2 cups / 480ml)
- 2 tablespoons (30ml) vegetable oil
- 4 cloves garlic, minced
- 1/4 cup (60ml) honey
- 1/4 cup (60ml) soy sauce
- 2 tablespoons (30ml) rice vinegar (or apple cider vinegar)
- 1 tablespoon (15ml) ketchup
- 1 teaspoon sesame oil
- 1/2 teaspoon red pepper flakes (optional)
- Sesame seeds (optional)
- Chopped green onions (optional)
Instructions:
- In a bowl, combine the chicken cubes with salt and pepper.
- In a separate bowl, whisk together egg, cornstarch, and flour.
- Dip each chicken piece into the egg mixture, ensuring it's fully coated.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Carefully add the chicken pieces to the hot oil in a single layer, being careful not to overcrowd the pan. Fry for 3-4 minutes per side, or until golden brown and cooked through. The internal temperature should reach 165°F (74°C).
- Remove the chicken from the skillet and place it on a plate lined with paper towels to drain excess oil.
- In a clean skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the minced garlic and sauté for about 30 seconds, until fragrant.
- Stir in the honey, soy sauce, rice vinegar (or apple cider vinegar), ketchup, sesame oil, and red pepper flakes (if using).
- Bring the sauce to a simmer and cook for 2-3 minutes, or until it thickens slightly.
- Add the fried Honey Garlic Chicken Bites to the skillet with the honey garlic sauce and toss to coat evenly.
- Sprinkle with sesame seeds and chopped green onions (optional). Serve immediately.
