Ingredients:
- 1 pound (450g) salmon fillet, cut into 2 portions
- 1 pound (450g) mixed vegetables (broccoli, bell peppers, red onion, zucchini)
- 2 tablespoons (30ml) olive oil
- 1 tablespoon (15ml) lemon juice, fresh
- 1 teaspoon (5ml) dried herbs (Italian blend, Herbs de Provence, or dried thyme)
- ½ teaspoon (2.5ml) garlic powder
- Salt and freshly ground black pepper to taste
- Lemon wedges, for serving (optional)
Instructions:
- Preheat oven to 400°F (200°C). Line baking sheet with parchment paper or foil (if using).
- Toss vegetables with 1 tablespoon (15ml) olive oil, salt, pepper, and garlic powder on the baking sheet. Spread in a single layer.
- Roast vegetables for 10 minutes.
- While veggies roast, whisk together the remaining 1 tablespoon (15ml) olive oil, lemon juice, dried herbs, salt, and pepper in a small bowl.
- Remove baking sheet from the oven. Place salmon fillets amongst the vegetables. Drizzle salmon with the lemon-herb mixture.
- Return baking sheet to the oven and roast for another 5-10 minutes, or until salmon is cooked through and flakes easily with a fork and the vegetables are tender.
- Serve immediately with lemon wedges, if desired.
