Ingredients:

  • 2 tablespoons olive oil (30 ml)
  • 2 tablespoons lime juice, freshly squeezed (30 ml)
  • 1 tablespoon soy sauce (15 ml)
  • 1 tablespoon chili powder (15 ml)
  • 1 teaspoon cumin (5 ml)
  • 1 teaspoon smoked paprika (5 ml)
  • 1/2 teaspoon garlic powder (2.5 ml)
  • 1/4 teaspoon cayenne pepper (optional, for heat) (1.25 ml)
  • 1/2 teaspoon salt (2.5 ml)
  • 1/4 teaspoon black pepper (1.25 ml)
  • 1 1/2 pounds boneless, skinless chicken breasts, thinly sliced OR 1 1/2 pounds flank steak, thinly sliced against the grain OR 1 1/2 pounds large shrimp, peeled and deveined (approx. 680g)
  • 1 large red bell pepper, thinly sliced
  • 1 large yellow bell pepper, thinly sliced
  • 1 large onion, thinly sliced
  • 1 tablespoon olive oil (15ml)
  • 12-18 small flour tortillas, warmed
  • Optional toppings: Sour cream, guacamole, salsa, shredded cheese, chopped cilantro, diced tomatoes, pickled jalapeños

Instructions:

  1. In a large bowl, whisk together the olive oil, lime juice, soy sauce, chili powder, cumin, smoked paprika, garlic powder, cayenne pepper (if using), salt, and pepper.
  2. Add your choice of protein (chicken, steak, or shrimp) to the marinade. Toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  3. While the protein is marinating, slice the bell peppers and onion into thin strips.
  4. Preheat your oven to 450°F (232°C).
  5. Toss the sliced bell peppers and onions with 1 tablespoon of olive oil. Spread them evenly on a large sheet pan. Place the marinated protein on top of the vegetables, spreading it out in a single layer.
  6. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through (internal temperature reaches 165°F/74°C), the steak is cooked to your desired doneness, or the shrimp is pink and opaque. Watch carefully to prevent burning.
  7. While the fajitas are roasting, warm the tortillas according to package directions.
  8. Remove the sheet pan from the oven. Serve the sizzling fajita mixture immediately with warm tortillas and your favorite toppings. Let everyone assemble their own fajitas!
