Ingredients:
- 2 (6 oz / 170g each) salmon fillets, skin on or off
- 1 tablespoon olive oil (plus extra for drizzling)
- 1 lemon, thinly sliced
- 2 tablespoons fresh herbs (such as dill, parsley, and thyme), chopped
- 1 clove garlic, minced
- Salt and freshly ground black pepper to taste
Instructions:
- Preheat the oven to 400°F (200°C/ Gas Mark 6).
- Pat the salmon fillets dry with paper towels.
- In a small bowl, combine the olive oil, minced garlic, chopped herbs, salt, and pepper.
- Drizzle salmon fillets with a little olive oil, then spread the herb mixture evenly over the top.
- Arrange the lemon slices over the herb mixture.
- Place the salmon fillets on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. (Check for an internal temperature of 145°F / 63°C)
- Garnish with fresh lemon wedges and extra herbs, if desired. Serve immediately.
