Ingredients:

  • 2 (6 oz / 170g each) salmon fillets, skin on or off
  • 1 tablespoon olive oil (plus extra for drizzling)
  • 1 lemon, thinly sliced
  • 2 tablespoons fresh herbs (such as dill, parsley, and thyme), chopped
  • 1 clove garlic, minced
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Preheat the oven to 400°F (200°C/ Gas Mark 6).
  2. Pat the salmon fillets dry with paper towels.
  3. In a small bowl, combine the olive oil, minced garlic, chopped herbs, salt, and pepper.
  4. Drizzle salmon fillets with a little olive oil, then spread the herb mixture evenly over the top.
  5. Arrange the lemon slices over the herb mixture.
  6. Place the salmon fillets on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. (Check for an internal temperature of 145°F / 63°C)
  7. Garnish with fresh lemon wedges and extra herbs, if desired. Serve immediately.
