Ingredients:
- 1.5 lbs (680g) Italian sausage (sweet, hot, or a combination), casings removed
- 1 tbsp (15ml) olive oil
- 2 large bell peppers (any color), cored, seeded, and sliced into 1/4-inch strips
- 2 large yellow onions, thinly sliced
- 2 cloves garlic, minced
- 1/2 tsp dried oregano
- 1/4 tsp red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- 4-6 hoagie rolls or sub rolls, split
- Optional toppings: Grated Parmesan cheese, marinara sauce, mustard
Instructions:
- Heat olive oil in a large skillet over medium heat. Crumble sausage into the pan and cook, breaking it up with a spoon, until browned and cooked through. Drain off any excess grease.
- Add sliced bell peppers and onions to the skillet. Cook, stirring occasionally, until softened and lightly caramelized (about 15-20 minutes).
- Stir in minced garlic, oregano, and red pepper flakes (if using). Season with salt and pepper to taste. Cook for another minute until fragrant.
- Reduce heat to low, and nestle the cooked sausage back into the skillet with the vegetables. Mix gently to combine. Cover and simmer for 5-10 minutes to allow flavors to meld.
- Toast the hoagie rolls (optional). Spoon the sausage, peppers, and onions mixture into the rolls. Top with Parmesan cheese, marinara sauce, or mustard, if desired. Serve immediately.
