Ingredients:

  • 1.5 lbs (680g) Italian sausage (sweet, hot, or a combination), casings removed
  • 1 tbsp (15ml) olive oil
  • 2 large bell peppers (any color), cored, seeded, and sliced into 1/4-inch strips
  • 2 large yellow onions, thinly sliced
  • 2 cloves garlic, minced
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 4-6 hoagie rolls or sub rolls, split
  • Optional toppings: Grated Parmesan cheese, marinara sauce, mustard

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Crumble sausage into the pan and cook, breaking it up with a spoon, until browned and cooked through. Drain off any excess grease.
  2. Add sliced bell peppers and onions to the skillet. Cook, stirring occasionally, until softened and lightly caramelized (about 15-20 minutes).
  3. Stir in minced garlic, oregano, and red pepper flakes (if using). Season with salt and pepper to taste. Cook for another minute until fragrant.
  4. Reduce heat to low, and nestle the cooked sausage back into the skillet with the vegetables. Mix gently to combine. Cover and simmer for 5-10 minutes to allow flavors to meld.
  5. Toast the hoagie rolls (optional). Spoon the sausage, peppers, and onions mixture into the rolls. Top with Parmesan cheese, marinara sauce, or mustard, if desired. Serve immediately.
