Ingredients:
- 2 cups (300g) fresh pomegranate seeds (arils)
- 2 tbsp (28g) unsalted butter, melted
- 3 tbsp (45ml) pomegranate molasses
- 1 tbsp (12g) honey
- 1.5 cups (190g) all-purpose flour
- 0.5 cup (100g) coconut sugar
- 1 tsp (5g) baking powder
- 0.5 tsp (3g) salt
- 0.5 cup (120g) plain Greek yogurt
- 2 large eggs
- 0.25 cup (60ml) melted coconut oil
- 1 tsp (5ml) vanilla extract
- 1 tbsp (6g) lemon zest
Instructions:
- Preheat your oven to 350°F (175°C) and grease the bottom of your cake pan thoroughly.
- In a small bowl, whisk together the melted butter, pomegranate molasses, and honey until smooth.
- Pour the mixture into the bottom of the pan and spread evenly.
- Scatter the pomegranate seeds across the glaze, pressing them down slightly to ensure they are fully embedded.
- In a medium bowl, sift together the flour, sugar, baking powder, and salt.
- In a separate larger bowl, beat the eggs, Greek yogurt, melted oil, vanilla, and lemon zest until smooth.
- Fold the dry ingredients into the wet mixture until just combined, then pour the batter over the pomegranate seeds.
- Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
