Ingredients:
- 2 cups (250g) all-purpose flour
- 3/4 cup (150g) granulated sugar
- 2 tsp (10g) baking powder
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) ground cinnamon
- 2 large (100g) eggs, room temperature
- 1/2 cup (120ml) vegetable oil
- 3/4 cup (180ml) Greek yogurt
- 1/4 cup (60ml) fresh orange juice
- 1 tbsp (6g) orange zest
- 1 tsp (5ml) vanilla extract
- 1 cup (150g) fresh pomegranate arils
- 1 tbsp (8g) all-purpose flour
Instructions:
- Preheat oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners. In a small bowl, toss the pomegranate arils with 1 tablespoon of flour until lightly coated.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
- In a medium bowl, beat the eggs, then whisk in the oil, Greek yogurt, orange juice, orange zest, and vanilla until emulsified.
- Pour the wet ingredients into the dry ingredients and fold together with a silicone spatula until just combined, avoiding overmixing.
- Gently fold in the flour-coated pomegranate seeds and distribute the batter evenly among the 12 muffin cups, filling almost to the brim.
- Bake for 18–22 minutes until the tops are mahogany-colored and a toothpick comes out clean. Let rest in the pan for 5 minutes before transferring to a wire rack.
