Ingredients:

  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (125g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tbsp (12g) baking powder
  • 1/4 tsp (1.5g) salt
  • 1 cup (240ml) whole milk
  • 4 cups (600g) sliced peaches
  • 1/2 cup (100g) granulated sugar
  • 1 tbsp (15ml) lemon juice
  • 1 tsp (2g) ground cinnamon

Instructions:

  1. Toss sliced peaches with 1/2 cup granulated sugar, lemon juice, and cinnamon in a bowl. Let macerate for 10 minutes until a natural syrup forms.
  2. Preheat the oven to 350°F (175°C).
  3. Pour the melted butter into the bottom of a 9x13 inch baking dish, swirling to coat the edges.
  4. In a mixing bowl, whisk together the flour, 1 cup granulated sugar, baking powder, and salt, then stir in the milk until just combined.
  5. Pour the batter directly over the melted butter in the baking dish without stirring.
  6. Spoon the cinnamon-peach mixture evenly over the top of the batter.
  7. Bake for 40–45 minutes until the edges turn a deep mahogany brown and the fruit is bubbling vigorously.
