Ingredients:

  • 2 cups (60g) rolled oats
  • 1 cup (30g) crispy brown rice cereal
  • 1 cup (250g) natural peanut butter (smooth or crunchy)
  • ½ cup (160ml) honey or maple syrup
  • 1 scoop (30g) chocolate protein powder
  • ½ cup (90g) dark chocolate chips or cacao nibs
  • 1 tbsp (15ml) coconut oil

Instructions:

  1. Line an 8x8-inch baking dish with parchment paper, allowing some overhang.
  2. In a large mixing bowl, combine rolled oats, crispy brown rice cereal, and chocolate protein powder.
  3. In a separate bowl, mix peanut butter and honey (or maple syrup) until smooth.
  4. Pour the peanut butter mixture over the dry ingredients and mix thoroughly until combined. Use a rubber spatula to ensure everything is evenly coated.
  5. Press the mixture firmly into the prepared baking dish, spreading it evenly.
  6. In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  7. Pour the melted chocolate over the pressed mixture and spread evenly with a spatula.
  8. Refrigerate for at least 30 minutes, or until solid.
  9. Once set, remove from the dish using the parchment paper and cut into bars.
