- 1 cup (120g) sweet rice flour (mochi flour)
- 1/4 cup (30g) cocoa powder
- 1/2 cup (100g) granulated sugar
- 1 cup (240ml) water
- 1 tablespoon (15ml) vegetable oil (plus more for greasing)
- 1/2 cup (90g) semi-sweet chocolate chips
- Optional: 1 tablespoon (15ml) milk (for smoother filling)
Instructions:
- Gather all ingredients and measure them out.
- In a microwave-safe bowl, whisk together sweet rice flour, cocoa powder, and sugar until well combined.
- Gradually add water and vegetable oil to the dry mixture, whisking continuously to prevent lumps from forming.
- Cover the bowl with plastic wrap or a microwave-safe lid, leaving a vent for steam. Microwave on high for 2 minutes.
- Remove carefully, stir the dough, and return to the microwave for an additional 2 minutes.
- In a separate bowl, combine chocolate chips and milk, if using. Microwave in 30-second bursts until melted, stirring until smooth.
- Grease your hands with vegetable oil. Flatten a small piece of mochi dough, add a teaspoon of chocolate filling, and pinch to seal. Roll into a ball.
- Place the mochi pieces on a greased plate. Allow them to cool for a few minutes before enjoying.
