  • 1/2 cup (100g) granulated sugar
  • 1 cup (240ml) water
  • 1 tablespoon (15ml) vegetable oil (plus more for greasing)
  • 1/2 cup (90g) semi-sweet chocolate chips
  • Optional: 1 tablespoon (15ml) milk (for smoother filling)

Instructions:

  1. Gather all ingredients and measure them out.
  2. In a microwave-safe bowl, whisk together sweet rice flour, cocoa powder, and sugar until well combined.
  3. Gradually add water and vegetable oil to the dry mixture, whisking continuously to prevent lumps from forming.
  4. Cover the bowl with plastic wrap or a microwave-safe lid, leaving a vent for steam. Microwave on high for 2 minutes.
  5. Remove carefully, stir the dough, and return to the microwave for an additional 2 minutes.
  6. In a separate bowl, combine chocolate chips and milk, if using. Microwave in 30-second bursts until melted, stirring until smooth.
  7. Grease your hands with vegetable oil. Flatten a small piece of mochi dough, add a teaspoon of chocolate filling, and pinch to seal. Roll into a ball.
  8. Place the mochi pieces on a greased plate. Allow them to cool for a few minutes before enjoying.
