Ingredients:
- 4 (6-ounce/170g) halibut fillets, skinless
- 2 tablespoons (30ml) olive oil
- 1 lemon, zested and juiced
- 2 cloves garlic, minced
- 2 tablespoons (30ml) fresh parsley, chopped
- 1 tablespoon (15ml) fresh thyme leaves
- 1/4 teaspoon (1.25ml) red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- 1/4 cup (25g) almond flour
- 2 tablespoons (30g) grated Parmesan cheese
- 1 tablespoon (15g) melted butter
- Pinch of salt and pepper
Instructions:
- Preheat oven to 400°F (200°C). Pat the halibut fillets dry with paper towels.
- In a small bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, parsley, thyme, red pepper flakes (if using), salt, and pepper.
- Place the halibut fillets in the baking dish and pour the marinade over them, ensuring they are evenly coated.
- In another small bowl, combine almond flour, Parmesan cheese, melted butter, salt, and pepper. Mix well.
- Sprinkle the almond flour mixture evenly over the halibut fillets.
- Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork. The fish should be opaque and the topping golden brown (if using).
- Let the halibut rest for a few minutes before serving.
