Ingredients:

  • 4 (6-ounce/170g) halibut fillets, skinless
  • 2 tablespoons (30ml) olive oil
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 2 tablespoons (30ml) fresh parsley, chopped
  • 1 tablespoon (15ml) fresh thyme leaves
  • 1/4 teaspoon (1.25ml) red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 1/4 cup (25g) almond flour
  • 2 tablespoons (30g) grated Parmesan cheese
  • 1 tablespoon (15g) melted butter
  • Pinch of salt and pepper

Instructions:

  1. Preheat oven to 400°F (200°C). Pat the halibut fillets dry with paper towels.
  2. In a small bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, parsley, thyme, red pepper flakes (if using), salt, and pepper.
  3. Place the halibut fillets in the baking dish and pour the marinade over them, ensuring they are evenly coated.
  4. In another small bowl, combine almond flour, Parmesan cheese, melted butter, salt, and pepper. Mix well.
  5. Sprinkle the almond flour mixture evenly over the halibut fillets.
  6. Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork. The fish should be opaque and the topping golden brown (if using).
  7. Let the halibut rest for a few minutes before serving.
