Ingredients:
- 1.5 lbs (680g) Salmon fillets, skin on or off, cut into 4 equal portions
- 1 lb (454g) Asparagus, trimmed
- 2 Lemons, thinly sliced
- 4 cloves Garlic, minced
- 2 tbsp Olive Oil
- 1 tbsp Fresh Parsley, chopped (or 1 tsp dried)
- 1 tsp Dried Thyme
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 4 sheets Heavy-Duty Aluminum Foil (approx. 12x12 inches or 30x30 cm)
Instructions:
- Preheat oven to 400°F (200°C).
- Place a sheet of foil on a baking sheet. Repeat with the other three.
- Arrange a bed of asparagus spears in the center of each foil sheet.
- Place a salmon fillet on top of the asparagus on each foil sheet.
- In a small bowl, mix minced garlic, olive oil, parsley, and thyme. Season with salt and pepper. Spoon over the salmon.
- Top each salmon fillet with several lemon slices.
- Bring the long sides of the foil together and fold over tightly to create a sealed packet. Fold in the short ends to completely enclose the salmon and asparagus.
- Bake in the preheated oven for 18-20 minutes, or until salmon is cooked through and flakes easily with a fork.
- Carefully open the foil packets (be careful of the steam!) and serve immediately.
