Ingredients:

  • 1.5 lbs (680g) Salmon fillets, skin on or off, cut into 4 equal portions
  • 1 lb (454g) Asparagus, trimmed
  • 2 Lemons, thinly sliced
  • 4 cloves Garlic, minced
  • 2 tbsp Olive Oil
  • 1 tbsp Fresh Parsley, chopped (or 1 tsp dried)
  • 1 tsp Dried Thyme
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 4 sheets Heavy-Duty Aluminum Foil (approx. 12x12 inches or 30x30 cm)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Place a sheet of foil on a baking sheet. Repeat with the other three.
  3. Arrange a bed of asparagus spears in the center of each foil sheet.
  4. Place a salmon fillet on top of the asparagus on each foil sheet.
  5. In a small bowl, mix minced garlic, olive oil, parsley, and thyme. Season with salt and pepper. Spoon over the salmon.
  6. Top each salmon fillet with several lemon slices.
  7. Bring the long sides of the foil together and fold over tightly to create a sealed packet. Fold in the short ends to completely enclose the salmon and asparagus.
  8. Bake in the preheated oven for 18-20 minutes, or until salmon is cooked through and flakes easily with a fork.
  9. Carefully open the foil packets (be careful of the steam!) and serve immediately.
