- 8 ounces ground sausage

Instructions:
- In a mixing bowl, whisk together the eggs, softened cream cheese, garlic powder, onion powder, salt, and pepper until smooth and well combined.
- Heat a lightly oiled non-stick skillet over medium heat. Pour 1/4 of the egg mixture into the skillet, spreading it into a thin circle (like a crêpe). Cook for 2-3 minutes per side, or until golden brown and set. Repeat with the remaining egg mixture. Keep warm.
- Heat the olive oil in the same skillet over medium heat. Add the ground sausage and cook, breaking it up with a spatula, until browned and cooked through. Drain off any excess grease.
- Add the chopped onion and bell pepper to the skillet with the sausage. Cook until softened, about 5 minutes. Add the minced garlic, chili powder, and cumin. Cook for 1 minute more, stirring constantly, until fragrant. Season with salt and pepper to taste.
- Divide the sausage filling evenly among the egg tortillas. Top with shredded cheddar cheese and your favorite toppings.
