Instructions:

  1. In a mixing bowl, whisk together the eggs, softened cream cheese, garlic powder, onion powder, salt, and pepper until smooth and well combined.
  2. Heat a lightly oiled non-stick skillet over medium heat. Pour 1/4 of the egg mixture into the skillet, spreading it into a thin circle (like a crêpe). Cook for 2-3 minutes per side, or until golden brown and set. Repeat with the remaining egg mixture. Keep warm.
  3. Heat the olive oil in the same skillet over medium heat. Add the ground sausage and cook, breaking it up with a spatula, until browned and cooked through. Drain off any excess grease.
  4. Add the chopped onion and bell pepper to the skillet with the sausage. Cook until softened, about 5 minutes. Add the minced garlic, chili powder, and cumin. Cook for 1 minute more, stirring constantly, until fragrant. Season with salt and pepper to taste.
  5. Divide the sausage filling evenly among the egg tortillas. Top with shredded cheddar cheese and your favorite toppings.
  6. Serve immediately and tuck in!
