Ingredients:
- 6 large eggs (300g)
- 1/4 cup heavy cream (60 ml)
- 1/4 teaspoon salt (1.5g)
- 1/4 teaspoon black pepper (1.5g)
- 6 slices bacon, cooked and crumbled (about 115g or 4 oz)
- 1 cup shredded cheddar cheese (115g or 4 oz)
- 1/4 cup chopped green onions (optional, about 25g or 1 oz)
- Cooking spray (Avocado or Olive Oil)
Instructions:
- Preheat oven to 350°F (175°C). Lightly grease a 12-cup muffin tin with cooking spray. Place the muffin tin on a baking sheet.
- In a large bowl, whisk together eggs, heavy cream, salt, and pepper until well combined.
- Gently fold in the cooked and crumbled bacon, shredded cheddar cheese, and chopped green onions (if using).
- Evenly distribute the egg mixture into the prepared muffin tin cups, filling each about ¾ full.
- Bake in the preheated oven for 25-30 minutes, or until the egg bites are set and lightly golden brown. A toothpick inserted into the center should come out clean.
- Let the egg bites cool in the muffin tin for a few minutes before carefully removing them. Serve warm or store in the refrigerator for meal prep.
