Ingredients:

  • 6 large eggs (300g)
  • 1/4 cup heavy cream (60 ml)
  • 1/4 teaspoon salt (1.5g)
  • 1/4 teaspoon black pepper (1.5g)
  • 6 slices bacon, cooked and crumbled (about 115g or 4 oz)
  • 1 cup shredded cheddar cheese (115g or 4 oz)
  • 1/4 cup chopped green onions (optional, about 25g or 1 oz)
  • Cooking spray (Avocado or Olive Oil)

Instructions:

  1. Preheat oven to 350°F (175°C). Lightly grease a 12-cup muffin tin with cooking spray. Place the muffin tin on a baking sheet.
  2. In a large bowl, whisk together eggs, heavy cream, salt, and pepper until well combined.
  3. Gently fold in the cooked and crumbled bacon, shredded cheddar cheese, and chopped green onions (if using).
  4. Evenly distribute the egg mixture into the prepared muffin tin cups, filling each about ¾ full.
  5. Bake in the preheated oven for 25-30 minutes, or until the egg bites are set and lightly golden brown. A toothpick inserted into the center should come out clean.
  6. Let the egg bites cool in the muffin tin for a few minutes before carefully removing them. Serve warm or store in the refrigerator for meal prep.
