Ingredients:
- 1 tbsp olive oil (15 ml)
- 1 small onion, finely chopped (about 1/2 cup)
- 2 cloves garlic, minced (about 2 tsp)
- 10 oz (283g) fresh spinach, roughly chopped (or 10 oz frozen spinach, thawed and squeezed dry)
- 4 oz (113g) feta cheese, crumbled
- 2 oz (56g) cream cheese, softened
- 1 large egg, lightly beaten
- 1/4 tsp ground nutmeg
- Salt and freshly ground black pepper to taste
- 1 sheet (about 14 oz/400g) ready-made puff pastry, thawed
- 1 large egg, beaten (for egg wash)
- Sesame seeds or poppy seeds, for topping (optional)
Instructions:
- Sauté onion and garlic in olive oil until softened. Add spinach and cook until wilted. Remove from heat and let cool slightly.
- In a mixing bowl, combine the cooked spinach mixture with feta, cream cheese, egg, nutmeg, salt, and pepper. Mix well.
- Unfold the puff pastry sheet on a lightly floured surface. Gently roll it out slightly if desired (optional – depends on thickness).
- Cut the puff pastry into 6 equal squares. Spoon a generous portion of the spinach filling onto the center of each square.
- Fold the puff pastry squares diagonally to form triangles. Crimp the edges with a fork to seal.
- Place the puffs on a baking sheet lined with parchment paper. Brush with egg wash and sprinkle with sesame or poppy seeds (if using).
- Bake in a preheated oven at 400°F (200°C) for 20-25 minutes, or until golden brown and puffed up. These spinach puffs are delicious!
- Let the puffs cool slightly on the baking sheet before serving.
