Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1 cup unsalted butter, chilled and cubed
  • 1/4 cup to 1/2 cup ice water

Instructions:

  1. In a large mixing bowl, whisk together the flour and salt until uniform.
  2. Add the chilled, cubed butter to the flour. Use a pastry cutter or fork to work the butter into the flour until the mixture resembles coarse crumbs with pea-sized lumps remaining.
  3. Drizzle in the ice water one tablespoon at a time, tossing gently with a fork after each addition. Stop as soon as the dough begins to clump together.
  4. Divide the dough into two equal discs. Wrap each tightly in plastic wrap and refrigerate for at least 1 hour.
  5. On a lightly floured surface, roll the chilled dough into a 12-inch circle and gently press it into a 9-inch pie dish.
