Ingredients:

  • 4 (6-8 ounce) salmon fillets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon lemon juice
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons chopped fresh parsley or green onions
  • 4 Lemon slices

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a large mixing bowl, whisk together olive oil, minced garlic, honey, soy sauce, lemon juice, and red pepper flakes (if using). Season with salt and pepper to taste.
  3. Cut four large sheets of aluminum foil (about 12 inches each). Place one salmon fillet in the center of each foil sheet.
  4. Spoon the honey garlic glaze evenly over each salmon fillet.
  5. Bring the long sides of the foil together and fold them over a few times to create a sealed packet. Fold in the short sides to completely enclose the salmon.
  6. Place the foil packets on a baking sheet and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Carefully open the foil packets (beware of steam!). Garnish with fresh parsley or green onions and a slice of lemon. Serve immediately.
