Ingredients:
- 4 (6-8 ounce) salmon fillets
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon lemon juice
- 1/2 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- 2 tablespoons chopped fresh parsley or green onions
- 4 Lemon slices
Instructions:
- Preheat oven to 400°F (200°C).
- In a large mixing bowl, whisk together olive oil, minced garlic, honey, soy sauce, lemon juice, and red pepper flakes (if using). Season with salt and pepper to taste.
- Cut four large sheets of aluminum foil (about 12 inches each). Place one salmon fillet in the center of each foil sheet.
- Spoon the honey garlic glaze evenly over each salmon fillet.
- Bring the long sides of the foil together and fold them over a few times to create a sealed packet. Fold in the short sides to completely enclose the salmon.
- Place the foil packets on a baking sheet and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Carefully open the foil packets (beware of steam!). Garnish with fresh parsley or green onions and a slice of lemon. Serve immediately.
