Ingredients:
- 1 cup (120g) whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoon granulated sugar
- 1 large egg
- 1 cup (240ml) milk
- 2 tablespoons (30ml) melted unsalted butter, plus more for greasing the pan
- 1 teaspoon vanilla extract
Instructions:
- In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, and sugar.
- In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined. Don't overmix! A few lumps are okay.
- Heat a lightly oiled or buttered griddle or non-stick skillet over medium heat. Test with a drop of water; it should sizzle gently.
- Pour 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface and the edges look set.
- Serve hot with your favourite toppings.
