Ingredients:

  • 1 cup (120g) whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 large egg
  • 1 cup (240ml) milk
  • 2 tablespoons (30ml) melted unsalted butter, plus more for greasing the pan
  • 1 teaspoon vanilla extract

Instructions:

  1. In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, and sugar.
  2. In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Don't overmix! A few lumps are okay.
  4. Heat a lightly oiled or buttered griddle or non-stick skillet over medium heat. Test with a drop of water; it should sizzle gently.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface and the edges look set.
  7. Serve hot with your favourite toppings.
