Ingredients:

  • 500g store-bought gnocchi
  • 1 tbsp olive oil
  • 115g unsalted butter
  • 4 cloves garlic, minced
  • ¼ cup freshly grated Parmesan cheese, plus more for serving
  • ¼ cup reserved pasta water
  • 2 tablespoons chopped fresh parsley, for garnish
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • Salt to taste

Instructions:

  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package directions. Cook until the gnocchi rise to the surface. Reserve ¼ cup of pasta water. Drain the gnocchi.
  2. Heat olive oil and butter in a large skillet over medium heat. Add the gnocchi to the skillet in a single layer (work in batches if necessary). Fry the gnocchi, flipping occasionally, until golden brown and crispy on all sides, about 5-7 minutes. Season with salt. Remove the gnocchi from the skillet and set aside.
  3. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Be careful not to burn the garlic. Add reserved pasta water, if needed, Parmesan cheese, salt, and pepper. Stir until the sauce is smooth and slightly thickened, about 1-2 minutes.
  4. Add the fried gnocchi to the skillet with the garlic parmesan sauce. Toss the gnocchi until evenly coated in the sauce. Remove from heat and stir in fresh parsley. Serve immediately, garnished with extra Parmesan cheese.
