Ingredients:
- 1.5 lbs (680g) sweet potatoes, peeled and cut into 1/2-inch thick spears
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 cup (25g) grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
- Optional: Fresh parsley, chopped, for garnish
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper (optional).
- In a large bowl, combine sweet potato spears, olive oil, minced garlic, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper. Toss well to ensure the spears are evenly coated.
- Spread the sweet potato spears in a single layer on the prepared baking sheet, ensuring they are not overcrowded.
- Roast for 25-30 minutes, flipping halfway through, or until the sweet potatoes are tender and lightly browned. Watch them carefully during the last few minutes to prevent burning.
- Remove from oven and garnish with fresh parsley (if using). Serve immediately.
