  • 1.5 lbs (680g) sweet potatoes, peeled and cut into 1/2-inch thick spears
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup (25g) grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • Optional: Fresh parsley, chopped, for garnish

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper (optional).
  2. In a large bowl, combine sweet potato spears, olive oil, minced garlic, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper. Toss well to ensure the spears are evenly coated.
  3. Spread the sweet potato spears in a single layer on the prepared baking sheet, ensuring they are not overcrowded.
  4. Roast for 25-30 minutes, flipping halfway through, or until the sweet potatoes are tender and lightly browned. Watch them carefully during the last few minutes to prevent burning.
  5. Remove from oven and garnish with fresh parsley (if using). Serve immediately.
