Ingredients:

  • 1 tablespoon olive oil (15 ml)
  • 4 cloves garlic, minced (approximately 12g)
  • 4 tablespoons unsalted butter (57g, ½ stick)
  • 10 ounces fresh spinach (283g), thoroughly washed and dried
  • ¼ teaspoon salt (1.5 g), or to taste
  • ⅛ teaspoon black pepper (0.3g), or to taste
  • Optional: Red pepper flakes for a touch of heat

Instructions:

  1. In a large skillet, heat the olive oil and butter over medium heat until the butter is melted and shimmering.
  2. Add the minced garlic to the skillet and sauté for about 30 seconds, or until fragrant.
  3. Add the spinach to the skillet in batches (if necessary). Use tongs to toss and stir the spinach as it wilts down.
  4. Continue cooking, stirring occasionally, until the spinach is completely wilted, about 2-3 minutes.
  5. Season with salt and pepper to taste. Add red pepper flakes if desired. Serve immediately.
