Ingredients:

  • 1.5 cups (190g) all-purpose flour
  • 1 tsp (5g) baking powder
  • 0.25 tsp (1.5g) salt
  • 0.5 cup (115g) unsalted butter, softened
  • 0.75 cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp (5ml) vanilla extract
  • 0.25 cup (60ml) fresh pomegranate juice, reduced by half
  • 1 tbsp (6g) lemon zest, finely grated
  • 0.5 cup (120ml) sour cream
  • 0.5 cup (75g) fresh pomegranate arils
  • 1 cup (120g) powdered sugar
  • 2 tbsp (30ml) fresh pomegranate juice
  • 0.5 tsp (2.5ml) lemon juice

Instructions:

  1. Simmer the pomegranate juice in a small pan until it's half the original volume, then let it cool.
  2. Preheat oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.
  3. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  4. In a large bowl, cream the softened butter and granulated sugar until pale and fluffy, approximately 3 minutes.
  5. Beat in the eggs one at a time, followed by the vanilla extract and lemon zest.
  6. Slowly stir in the sour cream and the reduced pomegranate juice until the batter has a soft pink tint.
  7. Gently fold in the dry ingredients using a spatula until just combined; do not overmix.
  8. Gently fold in the fresh pomegranate arils, then pour the batter into the prepared pan and smooth the top.
  9. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  10. Whisk together powdered sugar, pomegranate juice, and lemon juice to create a glaze; pour over the cooled cake.
