Ingredients:

  • 1 (12-ounce) package vanilla wafers (about 350g)
  • 4 medium ripe bananas, sliced (approximately 600g)
  • 2 tablespoons lemon juice (30ml)
  • 1 (5.1 ounce) package instant vanilla pudding mix (145g)
  • 3 cups whole milk (710ml)
  • 1 cup creamy peanut butter (250g)
  • 1/4 cup powdered sugar (30g)
  • 1 teaspoon vanilla extract (5ml)
  • 1 cup heavy whipping cream (240ml)
  • 2 tablespoons powdered sugar (30g)
  • 1/2 teaspoon vanilla extract (2.5ml)
  • Chopped peanuts, for garnish (optional)

Instructions:

  1. Toss sliced bananas with lemon juice to prevent browning.
  2. Whisk together pudding mix and milk according to package instructions. Beat in peanut butter, powdered sugar, and vanilla extract until smooth.
  3. Arrange a layer of vanilla wafers in the bottom of the baking dish. Top with a layer of banana slices. Pour half of the peanut butter pudding over the bananas.
  4. Repeat layers of vanilla wafers, bananas, and peanut butter pudding.
  5. Beat heavy cream, powdered sugar, and vanilla extract with an electric mixer until stiff peaks form (optional).
  6. Spread whipped cream (if using) over the pudding. Garnish with chopped peanuts (if using). Cover and chill for at least 2 hours before serving.
