Ingredients:
- 1 lb (454g) Ground Beef (80/20 blend preferred)
- 1 tbsp (15 ml) Olive Oil
- 1 small Yellow Onion, finely chopped (approx. ½ cup / 75g)
- 1 packet (1 oz / 28g) Taco Seasoning
- ½ cup (120 ml) Water
- 1 (16 oz / 454g) can Refried Beans
- Optional: 1 tbsp (15 ml) Taco Sauce or hot sauce
- 4 large Flour Tortillas (approx. 10-12 inch / 25-30cm diameter)
- 4 tbsp (60 ml) Vegetable Oil
- 1 cup (240 ml) Mexican Pizza Sauce
- 2 cups (200g) Shredded Mexican Cheese Blend
- ¼ cup (30g) Diced Tomatoes
- ¼ cup (20g) Sliced Green Onions
- Optional: Pickled Jalapeños
- 1 (8 oz / 227g) can Tomato Sauce
- 1 tbsp (15 ml) Taco Seasoning
- ½ tsp Chili Powder
- ½ tsp Garlic Powder
- ¼ tsp Onion Powder
Instructions:
- Prepare the Ground Beef: Brown ground beef in olive oil with onion. Drain any excess fat. Stir in taco seasoning and water; simmer until thickened.
- Warm the Refried Beans: Heat refried beans in a saucepan over low heat. Stir in taco sauce or hot sauce, if desired.
- Make the Mexican Pizza Sauce: Whisk together all sauce ingredients in a small bowl.
- Fry the Tortillas: Heat vegetable oil in a large skillet over medium heat. Fry tortillas one at a time, until golden brown and crispy. Drain on paper towels.
- Assemble the Mexican Pizzas: Spread refried beans evenly over two fried tortillas. Top with the seasoned ground beef. Drizzle with Mexican Pizza sauce. Sprinkle with Mexican cheese blend. Top with another fried tortilla.
- Bake (Optional): Place assembled pizzas on a baking sheet and bake at 350°F (175°C) for 5-7 minutes, or microwave for 30-60 seconds per pizza.
- Garnish and Serve: Top with diced tomatoes, green onions, and pickled jalapeños, if desired. Serve immediately.
