Ingredients:

  • 1 lb (454g) Ground Beef (80/20 blend preferred)
  • 1 tbsp (15 ml) Olive Oil
  • 1 small Yellow Onion, finely chopped (approx. ½ cup / 75g)
  • 1 packet (1 oz / 28g) Taco Seasoning
  • ½ cup (120 ml) Water
  • 1 (16 oz / 454g) can Refried Beans
  • Optional: 1 tbsp (15 ml) Taco Sauce or hot sauce
  • 4 large Flour Tortillas (approx. 10-12 inch / 25-30cm diameter)
  • 4 tbsp (60 ml) Vegetable Oil
  • 1 cup (240 ml) Mexican Pizza Sauce
  • 2 cups (200g) Shredded Mexican Cheese Blend
  • ¼ cup (30g) Diced Tomatoes
  • ¼ cup (20g) Sliced Green Onions
  • Optional: Pickled Jalapeños
  • 1 (8 oz / 227g) can Tomato Sauce
  • 1 tbsp (15 ml) Taco Seasoning
  • ½ tsp Chili Powder
  • ½ tsp Garlic Powder
  • ¼ tsp Onion Powder

Instructions:

  1. Prepare the Ground Beef: Brown ground beef in olive oil with onion. Drain any excess fat. Stir in taco seasoning and water; simmer until thickened.
  2. Warm the Refried Beans: Heat refried beans in a saucepan over low heat. Stir in taco sauce or hot sauce, if desired.
  3. Make the Mexican Pizza Sauce: Whisk together all sauce ingredients in a small bowl.
  4. Fry the Tortillas: Heat vegetable oil in a large skillet over medium heat. Fry tortillas one at a time, until golden brown and crispy. Drain on paper towels.
  5. Assemble the Mexican Pizzas: Spread refried beans evenly over two fried tortillas. Top with the seasoned ground beef. Drizzle with Mexican Pizza sauce. Sprinkle with Mexican cheese blend. Top with another fried tortilla.
  6. Bake (Optional): Place assembled pizzas on a baking sheet and bake at 350°F (175°C) for 5-7 minutes, or microwave for 30-60 seconds per pizza.
  7. Garnish and Serve: Top with diced tomatoes, green onions, and pickled jalapeños, if desired. Serve immediately.
