Ingredients:

  • 1 pound (450g) ground beef
  • 1 medium yellow onion, chopped (approx. 1 cup, 150g)
  • 1 packet (approx. 1 ounce, 30g) taco seasoning
  • 1 (15 ounce/425g) can black beans, rinsed and drained
  • 1 (15 ounce/425g) can kidney beans, rinsed and drained
  • 1 (15 ounce/425g) can whole kernel corn, drained
  • 1 (14.5 ounce/410g) can diced tomatoes, undrained
  • 1 (10 ounce/280g) can diced tomatoes and green chilies, undrained
  • 4 cups (950ml) beef broth

Instructions:

  1. In a large pot, brown ground beef over medium-high heat. Break it up with a spoon as it cooks.
  2. Add the chopped onion to the pot and cook until softened, about 3-5 minutes.
  3. Drain any excess grease from the pot (if necessary). Stir in the taco seasoning.
  4. Add the black beans, kidney beans, corn, diced tomatoes, diced tomatoes and green chilies, and beef broth to the pot.
  5. Bring the soup to a simmer, then reduce heat and let simmer for at least 5 minutes, or up to 10 minutes to allow the flavours to meld.
  6. Ladle soup into bowls and top with desired toppings.
