Ingredients:
- 1 pound (450g) ground beef
- 1 medium yellow onion, chopped (approx. 1 cup, 150g)
- 1 packet (approx. 1 ounce, 30g) taco seasoning
- 1 (15 ounce/425g) can black beans, rinsed and drained
- 1 (15 ounce/425g) can kidney beans, rinsed and drained
- 1 (15 ounce/425g) can whole kernel corn, drained
- 1 (14.5 ounce/410g) can diced tomatoes, undrained
- 1 (10 ounce/280g) can diced tomatoes and green chilies, undrained
- 4 cups (950ml) beef broth
Instructions:
- In a large pot, brown ground beef over medium-high heat. Break it up with a spoon as it cooks.
- Add the chopped onion to the pot and cook until softened, about 3-5 minutes.
- Drain any excess grease from the pot (if necessary). Stir in the taco seasoning.
- Add the black beans, kidney beans, corn, diced tomatoes, diced tomatoes and green chilies, and beef broth to the pot.
- Bring the soup to a simmer, then reduce heat and let simmer for at least 5 minutes, or up to 10 minutes to allow the flavours to meld.
- Ladle soup into bowls and top with desired toppings.
