Ingredients:

  • 2 tablespoons (30g) unsalted butter, melted
  • ½ cup (100g) granulated sugar
  • 1 large egg
  • ½ cup (120ml) full-fat coconut milk
  • ½ teaspoon vanilla extract
  • ½ teaspoon ube extract
  • ¼ cup (60g) ube halaya (ube jam)
  • ¼ teaspoon salt
  • 2 teaspoons baking powder
  • ½ cup (60g) cornstarch
  • ½ cup (60g) all-purpose flour
  • ¼ cup (30g) sweet rice flour (glutinous rice flour)
  • ¼ cup maple syrup (or your favourite syrup)
  • Fresh fruit (optional)

Instructions:

  1. In a large bowl, whisk together the melted butter, sugar, egg, coconut milk, vanilla extract, ube extract, and ube halaya until well combined.
  2. In a separate bowl, whisk together the salt, baking powder, cornstarch, all-purpose flour, and sweet rice flour.
  3. Gradually add the dry ingredients to the wet ingredients, whisking until just combined. Be careful not to overmix; a few lumps are okay.
  4. Preheat your waffle maker according to the manufacturer's instructions.
  5. Pour approximately ⅔ cup of batter onto the hot waffle maker. Close the lid and cook for 4-6 minutes, or until golden brown and crispy.
  6. Carefully remove the cooked waffle from the waffle maker and place it on a plate. Repeat with the remaining batter. Serve immediately with maple syrup and fresh fruit (optional).
