Ingredients:
- 2 tablespoons (30g) unsalted butter, melted
- ½ cup (100g) granulated sugar
- 1 large egg
- ½ cup (120ml) full-fat coconut milk
- ½ teaspoon vanilla extract
- ½ teaspoon ube extract
- ¼ cup (60g) ube halaya (ube jam)
- ¼ teaspoon salt
- 2 teaspoons baking powder
- ½ cup (60g) cornstarch
- ½ cup (60g) all-purpose flour
- ¼ cup (30g) sweet rice flour (glutinous rice flour)
- ¼ cup maple syrup (or your favourite syrup)
- Fresh fruit (optional)
Instructions:
- In a large bowl, whisk together the melted butter, sugar, egg, coconut milk, vanilla extract, ube extract, and ube halaya until well combined.
- In a separate bowl, whisk together the salt, baking powder, cornstarch, all-purpose flour, and sweet rice flour.
- Gradually add the dry ingredients to the wet ingredients, whisking until just combined. Be careful not to overmix; a few lumps are okay.
- Preheat your waffle maker according to the manufacturer's instructions.
- Pour approximately ⅔ cup of batter onto the hot waffle maker. Close the lid and cook for 4-6 minutes, or until golden brown and crispy.
- Carefully remove the cooked waffle from the waffle maker and place it on a plate. Repeat with the remaining batter. Serve immediately with maple syrup and fresh fruit (optional).
