Ingredients:
- 1 tablespoon olive oil (15 ml)
- 4 cloves garlic, minced (approximately 1 tablespoon)
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 8 ounces pasta (e.g., linguine, fettuccine, spaghetti) (approximately 225g)
- 4 cups chicken broth (or vegetable broth) (approximately 950 ml)
- 1/2 cup heavy cream (or half-and-half) (approximately 120 ml)
- 1/2 cup grated Parmesan cheese, plus extra for serving (approximately 50g)
- 2 tablespoons butter
- Salt and freshly ground black pepper, to taste
- Optional garnish: chopped fresh parsley or basil
Instructions:
- Heat olive oil in the pot over medium heat. Add garlic and Italian seasoning; sauté until fragrant (about 1 minute). Be careful not to burn the garlic!
- Add the pasta and chicken broth to the pot. Bring to a boil, then reduce heat to a simmer.
- Simmer, uncovered, stirring occasionally, until the pasta is cooked through and most of the liquid has been absorbed (about 15-20 minutes).
- Stir in the heavy cream and Parmesan cheese until melted and smooth. Add the butter.
