Ingredients:

  • 1 tablespoon olive oil (15 ml)
  • 4 cloves garlic, minced (approximately 1 tablespoon)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 8 ounces pasta (e.g., linguine, fettuccine, spaghetti) (approximately 225g)
  • 4 cups chicken broth (or vegetable broth) (approximately 950 ml)
  • 1/2 cup heavy cream (or half-and-half) (approximately 120 ml)
  • 1/2 cup grated Parmesan cheese, plus extra for serving (approximately 50g)
  • 2 tablespoons butter
  • Salt and freshly ground black pepper, to taste
  • Optional garnish: chopped fresh parsley or basil

Instructions:

  1. Heat olive oil in the pot over medium heat. Add garlic and Italian seasoning; sauté until fragrant (about 1 minute). Be careful not to burn the garlic!
  2. Add the pasta and chicken broth to the pot. Bring to a boil, then reduce heat to a simmer.
  3. Simmer, uncovered, stirring occasionally, until the pasta is cooked through and most of the liquid has been absorbed (about 15-20 minutes).
  4. Stir in the heavy cream and Parmesan cheese until melted and smooth. Add the butter.
