Ingredients:

  • 2 cups (250g) all-purpose flour, plus extra for dusting
  • 2 teaspoons (10g) baking powder
  • ½ teaspoon (3g) salt
  • ¼ teaspoon (1g) black pepper
  • 4 tablespoons (56g) unsalted butter, cold and cubed
  • 1 cup (115g) sharp cheddar cheese, shredded
  • ¼ cup (15g) fresh chives, finely chopped
  • ¾ cup (177ml) milk, cold
  • 1 large egg, beaten

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper (optional).
  2. In a large bowl, whisk together flour, baking powder, salt, and pepper.
  3. Cut the cold butter into the dry ingredients using a pastry blender or fork until the mixture resembles coarse crumbs.
  4. Stir in the shredded cheddar cheese and chopped chives.
  5. Gradually add the cold milk, mixing until just combined. Do not overmix! The dough will be slightly shaggy.
  6. Turn the dough out onto a lightly floured surface. Gently pat the dough into a 1-inch (2.5cm) thick circle.
  7. Use a sharp knife or biscuit cutter to cut out 8 scones. Place the scones onto the prepared baking sheet.
  8. Brush the tops of the scones with the beaten egg.
  9. Bake for 20-25 minutes, or until golden brown.
  10. Let the scones cool on a wire rack for a few minutes before serving.
