Ingredients:
- 2 cups (250g) all-purpose flour, plus extra for dusting
- 2 teaspoons (10g) baking powder
- ½ teaspoon (3g) salt
- ¼ teaspoon (1g) black pepper
- 4 tablespoons (56g) unsalted butter, cold and cubed
- 1 cup (115g) sharp cheddar cheese, shredded
- ¼ cup (15g) fresh chives, finely chopped
- ¾ cup (177ml) milk, cold
- 1 large egg, beaten
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper (optional).
- In a large bowl, whisk together flour, baking powder, salt, and pepper.
- Cut the cold butter into the dry ingredients using a pastry blender or fork until the mixture resembles coarse crumbs.
- Stir in the shredded cheddar cheese and chopped chives.
- Gradually add the cold milk, mixing until just combined. Do not overmix! The dough will be slightly shaggy.
- Turn the dough out onto a lightly floured surface. Gently pat the dough into a 1-inch (2.5cm) thick circle.
- Use a sharp knife or biscuit cutter to cut out 8 scones. Place the scones onto the prepared baking sheet.
- Brush the tops of the scones with the beaten egg.
- Bake for 20-25 minutes, or until golden brown.
- Let the scones cool on a wire rack for a few minutes before serving.
