Ingredients:
- 1.5 lbs sirloin tips, cut into 1-inch cubes
- 2 tbsp Cajun seasoning
- 2 tbsp neutral oil
- 12 oz rigatoni pasta
- 4 cloves fresh garlic, minced
- 1.5 cups heavy cream
- 0.5 cup whole milk
- 1 cup freshly grated Parmesan cheese
- 0.5 cup shredded mozzarella cheese
- 1 tsp smoked paprika
- 0.5 tsp salt
- 0.5 tsp black pepper
- 1 tbsp fresh parsley, chopped
Instructions:
- Pat the steak tips dry with a paper towel. Toss them in a bowl with the Cajun seasoning until every side is coated.
- Heat a cast-iron skillet over medium-high heat with the oil. Once the oil shimmers, add the beef in a single layer and sear for 2-3 minutes per side until a dark, mahogany crust forms. Remove steak from the pan and set aside.
- Bring a large pot of salted water to a boil. Cook the rigatoni according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
- In the same skillet used for the steak, add minced garlic and cook for 1 minute until fragrant. Pour in the heavy cream, whole milk, and smoked paprika. Bring to a light simmer over medium heat.
- Gradually whisk in the Parmesan and mozzarella cheeses until the sauce is smooth and thickened. Season with salt and pepper to taste.
- Toss the cooked rigatoni and seared steak tips into the sauce. Add reserved pasta water if needed to reach desired consistency. Garnish with fresh parsley and serve immediately.
