Ingredients:

  • 1.5 lbs sirloin tips, cut into 1-inch cubes
  • 2 tbsp Cajun seasoning
  • 2 tbsp neutral oil
  • 12 oz rigatoni pasta
  • 4 cloves fresh garlic, minced
  • 1.5 cups heavy cream
  • 0.5 cup whole milk
  • 1 cup freshly grated Parmesan cheese
  • 0.5 cup shredded mozzarella cheese
  • 1 tsp smoked paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Pat the steak tips dry with a paper towel. Toss them in a bowl with the Cajun seasoning until every side is coated.
  2. Heat a cast-iron skillet over medium-high heat with the oil. Once the oil shimmers, add the beef in a single layer and sear for 2-3 minutes per side until a dark, mahogany crust forms. Remove steak from the pan and set aside.
  3. Bring a large pot of salted water to a boil. Cook the rigatoni according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  4. In the same skillet used for the steak, add minced garlic and cook for 1 minute until fragrant. Pour in the heavy cream, whole milk, and smoked paprika. Bring to a light simmer over medium heat.
  5. Gradually whisk in the Parmesan and mozzarella cheeses until the sauce is smooth and thickened. Season with salt and pepper to taste.
  6. Toss the cooked rigatoni and seared steak tips into the sauce. Add reserved pasta water if needed to reach desired consistency. Garnish with fresh parsley and serve immediately.
