Ingredients:
- 4 ears fresh corn, husks and silk removed
- 2 tablespoons vegetable oil
- Salt and black pepper to taste
- 1/2 cup mayonnaise
- 1/4 cup sour cream or Mexican crema
- 1/4 cup finely chopped cilantro
- 2 tablespoons lime juice, freshly squeezed
- 1 clove garlic, minced
- 1/4 teaspoon chili powder
- Pinch of cayenne pepper (optional)
- 1/2 cup crumbled Cotija cheese or feta cheese
- Chili powder or Tajin seasoning, for sprinkling
- Lime wedges, for serving
Instructions:
- Brush corn with vegetable oil and season with salt and pepper.
- Grill the corn over medium heat, turning occasionally, until kernels are slightly charred and cooked through.
- In a bowl, combine mayonnaise, sour cream, cilantro, lime juice, garlic, chili powder, and cayenne pepper (if using). Whisk until smooth.
- Liberally spread the sauce over the grilled corn.
- Sprinkle with crumbled cheese and chili powder. Serve immediately with lime wedges.
