Ingredients:

  • 4 ears fresh corn, husks and silk removed
  • 2 tablespoons vegetable oil
  • Salt and black pepper to taste
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or Mexican crema
  • 1/4 cup finely chopped cilantro
  • 2 tablespoons lime juice, freshly squeezed
  • 1 clove garlic, minced
  • 1/4 teaspoon chili powder
  • Pinch of cayenne pepper (optional)
  • 1/2 cup crumbled Cotija cheese or feta cheese
  • Chili powder or Tajin seasoning, for sprinkling
  • Lime wedges, for serving

Instructions:

  1. Brush corn with vegetable oil and season with salt and pepper.
  2. Grill the corn over medium heat, turning occasionally, until kernels are slightly charred and cooked through.
  3. In a bowl, combine mayonnaise, sour cream, cilantro, lime juice, garlic, chili powder, and cayenne pepper (if using). Whisk until smooth.
  4. Liberally spread the sauce over the grilled corn.
  5. Sprinkle with crumbled cheese and chili powder. Serve immediately with lime wedges.
