Ingredients:
- 1 gallon apple cider
- 1 gallon apple juice
- 3 cups granulated sugar
- 1 ½ cups packed light brown sugar
- 750 ml bottle of Everclear or vodka (100 proof / 50% ABV)
- 6 cinnamon sticks
- 2 teaspoons ground allspice
- 1 teaspoon ground nutmeg
- ½ teaspoon ground cloves
- 4 medium apples, peeled, cored, and chopped
Instructions:
- In the large stockpot, combine the apple cider, apple juice, granulated sugar, and brown sugar.
- Add the cinnamon sticks, allspice, nutmeg, cloves, and chopped apples to the pot.
- Bring the mixture to a gentle simmer over medium heat. Stir occasionally until the sugars are fully dissolved. Reduce the heat to low and simmer for 1 hour, stirring occasionally.
- Remove the pot from the heat and allow the mixture to cool completely. This is crucial for safety!
- Once cooled, strain the mixture through a fine-mesh sieve or cheesecloth-lined colander into a large bowl or pitcher. Discard the solids.
- Stir in the Everclear or vodka.
- Using a funnel, carefully pour the Apple Pie Moonshine into sterilized glass jars. Leave a little space at the top (about ½ inch). Seal the jars tightly.
- Store the jars in a cool, dark place for at least 7 days. The longer it sits, the smoother the flavour will become. Agitate gently every other day.
