Ingredients:

  • 1 gallon apple cider
  • 1 gallon apple juice
  • 3 cups granulated sugar
  • 1 ½ cups packed light brown sugar
  • 750 ml bottle of Everclear or vodka (100 proof / 50% ABV)
  • 6 cinnamon sticks
  • 2 teaspoons ground allspice
  • 1 teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • 4 medium apples, peeled, cored, and chopped

Instructions:

  1. In the large stockpot, combine the apple cider, apple juice, granulated sugar, and brown sugar.
  2. Add the cinnamon sticks, allspice, nutmeg, cloves, and chopped apples to the pot.
  3. Bring the mixture to a gentle simmer over medium heat. Stir occasionally until the sugars are fully dissolved. Reduce the heat to low and simmer for 1 hour, stirring occasionally.
  4. Remove the pot from the heat and allow the mixture to cool completely. This is crucial for safety!
  5. Once cooled, strain the mixture through a fine-mesh sieve or cheesecloth-lined colander into a large bowl or pitcher. Discard the solids.
  6. Stir in the Everclear or vodka.
  7. Using a funnel, carefully pour the Apple Pie Moonshine into sterilized glass jars. Leave a little space at the top (about ½ inch). Seal the jars tightly.
  8. Store the jars in a cool, dark place for at least 7 days. The longer it sits, the smoother the flavour will become. Agitate gently every other day.
