Ingredients:
- 2 cups (250g) all-purpose flour, plus more for dusting
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon salt
- ½ cup (1 stick, 113g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup (240ml) buttermilk
- 2 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp recommended)
- 2 Tablespoons (30g) brown sugar, packed
- 1 cup (120g) powdered sugar
- 2-3 tablespoons milk
- ½ teaspoon vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
- In a small bowl, toss the diced apples with brown sugar.
- Gently fold the apple mixture into the batter.
- Pour the batter into the prepared loaf pan. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean or with a few moist crumbs.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Add more milk, 1 teaspoon at a time, if needed to reach desired consistency.
- Drizzle the glaze over the cooled bread. Slice and serve.
