Ingredients:

  • 4 slices of whole grain bread (about 240g)
  • 1 medium zucchini, thinly sliced (approximately 150g)
  • 1 cup of shredded cheddar cheese (about 100g)
  • 2 tablespoons of unsalted butter, softened (about 28g)
  • Salt and pepper, to taste
  • 1 tablespoon Dijon mustard (optional)
  • Fresh basil leaves, for garnish

Instructions:

  1. Wash and thinly slice the zucchini using a knife or mandoline. Season with salt and pepper.
  2. Butter one side of each slice of bread. Spread a thin layer of Dijon mustard on the unbuttered side of two slices (optional). Add a generous layer of cheddar cheese, then zucchini slices, and top with more cheese. Close the sandwich with another slice of bread, buttered side out.
  3. Heat the skillet over medium heat. Place the sandwich in the skillet. Cook until golden brown, about 3-4 minutes. Flip the sandwich and cook the other side until cheese is melted and the bread is golden.
  4. Remove from heat, slice in half, and serve warm garnished with fresh basil if desired.
