Ingredients:
- 4 slices of whole grain bread (about 240g)
- 1 medium zucchini, thinly sliced (approximately 150g)
- 1 cup of shredded cheddar cheese (about 100g)
- 2 tablespoons of unsalted butter, softened (about 28g)
- Salt and pepper, to taste
- 1 tablespoon Dijon mustard (optional)
- Fresh basil leaves, for garnish
Instructions:
- Wash and thinly slice the zucchini using a knife or mandoline. Season with salt and pepper.
- Butter one side of each slice of bread. Spread a thin layer of Dijon mustard on the unbuttered side of two slices (optional). Add a generous layer of cheddar cheese, then zucchini slices, and top with more cheese. Close the sandwich with another slice of bread, buttered side out.
- Heat the skillet over medium heat. Place the sandwich in the skillet. Cook until golden brown, about 3-4 minutes. Flip the sandwich and cook the other side until cheese is melted and the bread is golden.
- Remove from heat, slice in half, and serve warm garnished with fresh basil if desired.
