Ingredients:
- 2 medium zucchini (about 450g/1 lb), spiralized
- 1 tablespoon olive oil (15ml)
- 2 cloves garlic (6g), minced
- 1/4 teaspoon red pepper flakes (0.5g) (optional, for a kick)
- Salt and freshly ground black pepper, to taste
- 1 cup marinara sauce (240ml), store-bought or homemade
- 1 cup shredded mozzarella cheese (115g/4 oz)
- 1/4 cup mini pepperoni slices (30g/1 oz), or other pizza toppings (sliced olives, mushrooms, bell peppers, etc.)
- 2 tablespoons grated Parmesan cheese (15g)
- Fresh basil leaves, for garnish (optional)
Instructions:
- Spiralize the zucchini into noodles. Set aside.
- Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes (if using) and sauté for about 30 seconds, until fragrant.
- Add zucchini noodles to the skillet. Season with salt and pepper. Sauté for 2-3 minutes, or until the zoodles are tender-crisp and slightly softened.
- Pour marinara sauce over the zoodles. Top with mozzarella cheese, pepperoni (or other toppings), and Parmesan cheese.
- Cover the skillet and cook for 1-2 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh basil leaves (if using). Serve immediately.
