Ingredients:

  • 2 medium zucchini (about 450g/1 lb), spiralized
  • 1 tablespoon olive oil (15ml)
  • 2 cloves garlic (6g), minced
  • 1/4 teaspoon red pepper flakes (0.5g) (optional, for a kick)
  • Salt and freshly ground black pepper, to taste
  • 1 cup marinara sauce (240ml), store-bought or homemade
  • 1 cup shredded mozzarella cheese (115g/4 oz)
  • 1/4 cup mini pepperoni slices (30g/1 oz), or other pizza toppings (sliced olives, mushrooms, bell peppers, etc.)
  • 2 tablespoons grated Parmesan cheese (15g)
  • Fresh basil leaves, for garnish (optional)

Instructions:

  1. Spiralize the zucchini into noodles. Set aside.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes (if using) and sauté for about 30 seconds, until fragrant.
  3. Add zucchini noodles to the skillet. Season with salt and pepper. Sauté for 2-3 minutes, or until the zoodles are tender-crisp and slightly softened.
  4. Pour marinara sauce over the zoodles. Top with mozzarella cheese, pepperoni (or other toppings), and Parmesan cheese.
  5. Cover the skillet and cook for 1-2 minutes, or until the cheese is melted and bubbly.
  6. Garnish with fresh basil leaves (if using). Serve immediately.
