Ingredients:

  • 2 large cucumbers (about 1 lb / 450g total), thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 1 tablespoon sesame seeds, toasted
  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce (low sodium preferred)
  • 1 tablespoon granulated sugar
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • Pinch of black pepper

Instructions:

  1. Slice cucumbers thinly. If using English cucumbers, no need to peel. If using other types, peeling is optional.
  2. Thinly slice the red onion.
  3. Place sliced cucumbers and red onion in a large bowl.
  4. In a small bowl or jar, whisk together rice vinegar, soy sauce, sugar, sesame oil, ginger, garlic, red pepper flakes (if using), and black pepper until the sugar is dissolved.
  5. Pour the dressing over the cucumbers and onions. Toss gently to coat evenly.
  6. For best flavour, chill the salad for at least 15 minutes before serving.
  7. Just before serving, sprinkle with toasted sesame seeds. Give it a final toss. Serve immediately or keep chilled until ready to eat.
