Ingredients:
- 2 large cucumbers (about 1 lb / 450g total), thinly sliced
- 1/4 cup red onion, thinly sliced
- 1 tablespoon sesame seeds, toasted
- 3 tablespoons rice vinegar
- 2 tablespoons soy sauce (low sodium preferred)
- 1 tablespoon granulated sugar
- 1 tablespoon sesame oil
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- Pinch of black pepper
Instructions:
- Slice cucumbers thinly. If using English cucumbers, no need to peel. If using other types, peeling is optional.
- Thinly slice the red onion.
- Place sliced cucumbers and red onion in a large bowl.
- In a small bowl or jar, whisk together rice vinegar, soy sauce, sugar, sesame oil, ginger, garlic, red pepper flakes (if using), and black pepper until the sugar is dissolved.
- Pour the dressing over the cucumbers and onions. Toss gently to coat evenly.
- For best flavour, chill the salad for at least 15 minutes before serving.
- Just before serving, sprinkle with toasted sesame seeds. Give it a final toss. Serve immediately or keep chilled until ready to eat.
