Ingredients:

  • 1 pound (450 g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 ounces (225 g) penne pasta
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 cup (240 ml) heavy cream
  • 1 cup (240 g) Cajun seasoning mix
  • Salt and pepper, to taste
  • 1/4 cup (10 g) fresh parsley, chopped
  • Grated Parmesan cheese (optional)

Instructions:

  1. Boil water in a medium pot. Add penne pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion; sauté until translucent (about 3-4 minutes).
  3. Add sliced bell peppers and minced garlic; cook for another 2-3 minutes until soft.
  4. Push vegetables to the side of the skillet, and add chicken pieces. Season with Cajun seasoning, salt, and pepper. Cook until chicken is golden brown and fully cooked (about 5-7 minutes).
  5. Pour in heavy cream; stir to combine. Allow to simmer for 2-3 minutes until slightly thickened.
  6. Add cooked pasta to the skillet; toss to coat in the sauce. Allow to cook for another 2-3 minutes to heat through.
  7. Garnish with parsley and grated Parmesan cheese, if desired.
