Ingredients:
- 1 pound (450 g) boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 ounces (225 g) penne pasta
- 2 tablespoons olive oil
- 1 medium onion, diced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 cloves garlic, minced
- 1 cup (240 ml) heavy cream
- 1 cup (240 g) Cajun seasoning mix
- Salt and pepper, to taste
- 1/4 cup (10 g) fresh parsley, chopped
- Grated Parmesan cheese (optional)
Instructions:
- Boil water in a medium pot. Add penne pasta and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced onion; sauté until translucent (about 3-4 minutes).
- Add sliced bell peppers and minced garlic; cook for another 2-3 minutes until soft.
- Push vegetables to the side of the skillet, and add chicken pieces. Season with Cajun seasoning, salt, and pepper. Cook until chicken is golden brown and fully cooked (about 5-7 minutes).
- Pour in heavy cream; stir to combine. Allow to simmer for 2-3 minutes until slightly thickened.
- Add cooked pasta to the skillet; toss to coat in the sauce. Allow to cook for another 2-3 minutes to heat through.
- Garnish with parsley and grated Parmesan cheese, if desired.
