Ingredients:
- 1/4 cup olive oil
- Juice of 2 large lemons (about 1/2 cup)
- 4 cloves garlic, minced
- 2 tsp fresh rosemary, chopped (or 1 tsp dried)
- 2 tsp fresh thyme, chopped (or 1 tsp dried)
- 1 tsp salt
- 1/2 tsp black pepper
- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- Fresh lemon wedges for serving
- Extra chopped herbs for garnish
Instructions:
- In a mixing bowl, combine olive oil, lemon juice, minced garlic, rosemary, thyme, salt, and pepper. Whisk until well blended.
- Place chicken breasts in a resealable plastic bag or dish. Pour marinade over the chicken, ensuring even coverage. Seal and refrigerate for at least 1 hour (up to 4 hours for more flavor).
- Preheat your grill to medium-high heat (about 375°F or 190°C).
- Remove chicken from marinade and discard the leftover marinade. Grill chicken for 6-7 minutes per side.
- Use a meat thermometer to check for an internal temperature of 165°F (74°C).
- Remove chicken from grill and let rest for 5 minutes before slicing. Serve with lemon wedges and fresh herbs.
