Ingredients:

  • 4 fillets mahi mahi (about 6 ounces/170g each)
  • 3 tablespoons olive oil (45ml)
  • 2 tablespoons fresh lime juice (30ml)
  • 1 teaspoon smoked paprika (5g)
  • 1 teaspoon garlic powder (3g)
  • 1 teaspoon salt (5g)
  • 1/2 teaspoon black pepper (2g)
  • 1 ripe mango, diced
  • 1 small red onion, finely chopped
  • 1 jalapeño, minced (seeds removed for less heat)
  • 1/4 cup fresh cilantro, chopped (15g)
  • Juice of 1 lime
  • Salt to taste

Instructions:

  1. In a small bowl, whisk together olive oil, lime juice, smoked paprika, garlic powder, salt, and black pepper.
  2. Place mahi mahi fillets in a shallow dish and pour the marinade over them. Cover and let marinate for 15 minutes.
  3. In a mixing bowl, combine diced mango, red onion, jalapeño, cilantro, and lime juice. Season with salt to taste. Set aside.
  4. Heat the grill to medium-high.
  5. Place marinated fillets on the grill. Cook for 5-6 minutes per side, or until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  6. Plate the grilled mahi mahi and top with the fresh mango salsa.
