Ingredients:
- 1 ½ lbs (680 g) large shrimp, peeled and deveined
- 4 cloves garlic, minced
- Zest and juice of 2 limes (approximately ¼ cup juice)
- 2 tbsp olive oil
- 1 tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp red pepper flakes (optional for heat)
- 2 ripe avocados, diced
- 1 medium red onion, finely chopped
- 1 medium jalapeño, minced (optional)
- ¼ cup fresh cilantro, chopped
- Juice of 1 lime
- Salt, to taste
Instructions:
- In a large mixing bowl, combine shrimp, garlic, lime zest, lime juice, olive oil, smoked paprika, salt, black pepper, and red pepper flakes. Toss to coat. Let marinate for 10-15 minutes.
- In another bowl, gently mix diced avocados, red onion, jalapeño (if using), cilantro, lime juice, and salt. Set aside.
- Heat a large skillet over medium-high heat. Add marinated shrimp in a single layer. Cook for 2-3 minutes per side or until shrimp are pink and opaque, stirring occasionally. Check for doneness.
- Plate the shrimp and top with a generous scoop of avocado salsa. Serve immediately.
