Ingredients:

  • 1 ½ lbs (680 g) large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • Zest and juice of 2 limes (approximately ¼ cup juice)
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes (optional for heat)
  • 2 ripe avocados, diced
  • 1 medium red onion, finely chopped
  • 1 medium jalapeño, minced (optional)
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt, to taste

Instructions:

  1. In a large mixing bowl, combine shrimp, garlic, lime zest, lime juice, olive oil, smoked paprika, salt, black pepper, and red pepper flakes. Toss to coat. Let marinate for 10-15 minutes.
  2. In another bowl, gently mix diced avocados, red onion, jalapeño (if using), cilantro, lime juice, and salt. Set aside.
  3. Heat a large skillet over medium-high heat. Add marinated shrimp in a single layer. Cook for 2-3 minutes per side or until shrimp are pink and opaque, stirring occasionally. Check for doneness.
  4. Plate the shrimp and top with a generous scoop of avocado salsa. Serve immediately.
