Ingredients:
- 2 cups glutinous rice
- 1 cup Gac paste (frozen)
- 2 tablespoons sake or white wine
- ½ teaspoon salt
- 4 teaspoons granulated sugar
- 2 tablespoons black sesame seeds (optional)
- 1 teaspoon granulated sugar (optional)
- 1 pinch salt (optional)
Instructions:
- Rinse the glutinous rice under cold water until the water runs clear (4-5 times).
- Transfer the rice to a bowl and cover it with water. Soak for 4 hours (or overnight in the fridge).
- Drain the soaked rice and set aside.
- Strain the Gac paste to eliminate excess liquid.
- In a bowl, combine the Gac paste, soaked rice, sake, and salt. Stir thoroughly until well blended.
- Fill the bottom of the steamer pot with water and bring to a simmer.
- Line the steamer insert with a sheet of parchment paper, poking holes for steam circulation.
- Scoop the rice mixture into the steamer. Cover and steam for 20 minutes or until cooked through.
- Taste for doneness and continue steaming if needed.
- Remove the rice from the steamer and stir in the granulated sugar until evenly combined.
- Grind the black sesame seeds using a mortar and pestle or the back of a knife in a bowl.
- Mix the sesame with sugar and salt.
- Dish out the Xoi Gac and top with the black sesame mixture. Enjoy!
