Ingredients:

  • 2 cups glutinous rice
  • 1 cup Gac paste (frozen)
  • 2 tablespoons sake or white wine
  • ½ teaspoon salt
  • 4 teaspoons granulated sugar
  • 2 tablespoons black sesame seeds (optional)
  • 1 teaspoon granulated sugar (optional)
  • 1 pinch salt (optional)

Instructions:

  1. Rinse the glutinous rice under cold water until the water runs clear (4-5 times).
  2. Transfer the rice to a bowl and cover it with water. Soak for 4 hours (or overnight in the fridge).
  3. Drain the soaked rice and set aside.
  4. Strain the Gac paste to eliminate excess liquid.
  5. In a bowl, combine the Gac paste, soaked rice, sake, and salt. Stir thoroughly until well blended.
  6. Fill the bottom of the steamer pot with water and bring to a simmer.
  7. Line the steamer insert with a sheet of parchment paper, poking holes for steam circulation.
  8. Scoop the rice mixture into the steamer. Cover and steam for 20 minutes or until cooked through.
  9. Taste for doneness and continue steaming if needed.
  10. Remove the rice from the steamer and stir in the granulated sugar until evenly combined.
  11. Grind the black sesame seeds using a mortar and pestle or the back of a knife in a bowl.
  12. Mix the sesame with sugar and salt.
  13. Dish out the Xoi Gac and top with the black sesame mixture. Enjoy!
