Ingredients:
- 1 medium ripe banana, mashed (about 1/2 cup / 120g)
- 1 large egg
- 1/4 cup all-purpose flour (30g), plus more for dusting
- 1/4 cup whole wheat flour (30g)
- 1/2 cup skim milk (120ml)
- 1 teaspoon baking powder
- 1/4 teaspoon ground cinnamon
- Pinch of salt
- Nonstick cooking spray
Instructions:
- In a mixing bowl, mash the banana until smooth.
- Add the egg and milk to the mashed banana. Whisk until well combined.
- In a separate bowl, whisk together the flours, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, whisking until just combined. Be careful not to overmix; a few lumps are okay.
- Lightly coat a non-stick skillet or griddle with nonstick cooking spray and heat over medium heat.
- Pour 1/4 cup of batter onto the hot skillet for each pancake. Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface and the edges appear set.
- Serve immediately with your favorite toppings.
