Ingredients:

  • 1 medium ripe banana, mashed (about 1/2 cup / 120g)
  • 1 large egg
  • 1/4 cup all-purpose flour (30g), plus more for dusting
  • 1/4 cup whole wheat flour (30g)
  • 1/2 cup skim milk (120ml)
  • 1 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • Nonstick cooking spray

Instructions:

  1. In a mixing bowl, mash the banana until smooth.
  2. Add the egg and milk to the mashed banana. Whisk until well combined.
  3. In a separate bowl, whisk together the flours, baking powder, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, whisking until just combined. Be careful not to overmix; a few lumps are okay.
  5. Lightly coat a non-stick skillet or griddle with nonstick cooking spray and heat over medium heat.
  6. Pour 1/4 cup of batter onto the hot skillet for each pancake. Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface and the edges appear set.
  7. Serve immediately with your favorite toppings.
