Ingredients:
- 60g honey powder
- 15g smoked paprika
- 8g garlic powder
- 8g onion powder
- 3g cayenne pepper
- 6g kosher salt
- 2g cracked black pepper
- 3 lbs chicken wings
- 30ml avocado oil
Instructions:
- Pat the chicken wings thoroughly with heavy-duty paper towels until the skin is completely matte and dry.
- Place wings in a large mixing bowl and drizzle with avocado oil, tossing until every wing is lightly coated.
- Combine honey powder, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper in a small bowl to create the dry rub.
- Sprinkle the dry rub over the wings in three separate stages, tossing after each addition until the coating is thick and opaque.
- Arrange the seasoned wings on a wire cooling rack set over a rimmed baking sheet for maximum airflow.
- Bake at 400°F (200°C) for 35–40 minutes, flipping the wings halfway through the cooking time.
- Remove from oven once the wings reach a deep mahogany color and the sugars are visibly bubbling on the skin.
