Ingredients:
- 1 cup (120g) whole wheat flour, plus more for dusting
- 2 tablespoons (25g) granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 large egg
- 1 cup (240ml) milk (any kind - dairy or non-dairy)
- 2 tablespoons (30ml) unsalted butter, melted, plus more for greasing the pan
- 1 teaspoon vanilla extract
Instructions:
- In a large bowl, whisk together the whole wheat flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined. A few lumps are okay!
- Heat a lightly oiled griddle or non-stick pan over medium heat. The pan is ready when a drop of water sizzles and evaporates quickly.
- Pour 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface and the edges look set.
- Keep cooked pancakes warm in a preheated 200°F (93°C) oven until ready to serve (optional).
- Serve immediately with your favorite toppings.
