Ingredients:

  • 1 cup (120g) whole wheat flour, plus more for dusting
  • 2 tablespoons (25g) granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 cup (240ml) milk (any kind - dairy or non-dairy)
  • 2 tablespoons (30ml) unsalted butter, melted, plus more for greasing the pan
  • 1 teaspoon vanilla extract

Instructions:

  1. In a large bowl, whisk together the whole wheat flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and gently stir until just combined. A few lumps are okay!
  4. Heat a lightly oiled griddle or non-stick pan over medium heat. The pan is ready when a drop of water sizzles and evaporates quickly.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface and the edges look set.
  7. Keep cooked pancakes warm in a preheated 200°F (93°C) oven until ready to serve (optional).
  8. Serve immediately with your favorite toppings.
