Ingredients:
- 1 whole head of garlic
- 1 small clove of raw garlic, finely minced
- 2 tbsp extra virgin olive oil, divided
- 8 oz high-quality feta cheese, crumbled
- 0.5 cup full-fat Greek yogurt
- 2 tbsp cream cheese, softened
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 0.5 tsp freshly cracked black pepper
Instructions:
- Preheat your oven to 400°F (200°C). Prepare the garlic by slicing about a quarter inch off the top of the head to expose the cloves.
- Drizzle the exposed cloves with 1 tbsp olive oil and wrap the entire head tightly in aluminum foil.
- Roast the garlic for 30–35 minutes until the cloves are soft and mahogany colored.
- Remove the garlic from the oven and let it cool. Once cool, squeeze the skins to release the paste into a small bowl.
- Place the 8 oz of crumbled feta and 2 tbsp of softened cream cheese into the food processor.
- Pulse the cheeses several times until the mixture looks like small, uniform crumbs.
- Add the Greek yogurt, roasted garlic paste, the minced raw garlic clove, lemon juice, lemon zest, and black pepper.
- Process on high speed for 1 minute, then slowly stream in the remaining 1 tbsp of olive oil while the motor is still running.
- Continue processing for 2–3 minutes until the texture is light, fluffy, and completely smooth.
- Transfer the dip to a serving bowl.
