Ingredients:
- 1 medium ripe banana, mashed (approx. 120g / 4 oz)
- 2 large eggs (approx. 100g / 3.5 oz)
- 2 tablespoons all-purpose flour (20g / 0.7 oz)
- 1/4 teaspoon baking powder (1g)
- 1/4 teaspoon ground cinnamon
- Pinch of salt
- Cooking spray (for the pan)
Instructions:
- In a medium bowl, mash the banana until smooth.
- Add the eggs to the mashed banana and whisk until well combined.
- In the same bowl, add the flour, baking powder, cinnamon, and salt. Gently whisk until just combined. Be careful not to overmix. A few lumps are okay!
- Heat a non-stick skillet or griddle over medium heat. Lightly coat with cooking spray.
- Pour 1/4 cup of batter onto the hot skillet for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip carefully with a spatula when bubbles start to form on the surface and the edges look set.
- Serve immediately with your favorite toppings (optional).
