Ingredients:

  • 1 medium ripe banana, mashed (approx. 120g / 4 oz)
  • 2 large eggs (approx. 100g / 3.5 oz)
  • 2 tablespoons all-purpose flour (20g / 0.7 oz)
  • 1/4 teaspoon baking powder (1g)
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • Cooking spray (for the pan)

Instructions:

  1. In a medium bowl, mash the banana until smooth.
  2. Add the eggs to the mashed banana and whisk until well combined.
  3. In the same bowl, add the flour, baking powder, cinnamon, and salt. Gently whisk until just combined. Be careful not to overmix. A few lumps are okay!
  4. Heat a non-stick skillet or griddle over medium heat. Lightly coat with cooking spray.
  5. Pour 1/4 cup of batter onto the hot skillet for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip carefully with a spatula when bubbles start to form on the surface and the edges look set.
  7. Serve immediately with your favorite toppings (optional).
