Ingredients:
- 1 cup (120g) all-purpose flour (plain flour)
- 2 teaspoons baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 1 tablespoon granulated sweetener (e.g., Stevia, Erythritol)
- 1 medium ripe banana, mashed well
- 1 large egg
- ¾ cup (177ml) unsweetened almond milk
- 1 teaspoon vanilla extract
- Non-stick cooking spray
Instructions:
- In a large bowl, whisk together the flour, baking powder, cinnamon, salt, and sweetener.
- In a separate bowl, mash the banana until smooth.
- Add the egg, almond milk, and vanilla extract to the mashed banana and whisk until well combined.
- Pour the wet ingredients into the dry ingredients and gently whisk until just combined. Do not overmix. A few lumps are okay.
- Heat a lightly oiled griddle or non-stick frying pan over medium heat. Test the heat by dropping a small amount of batter onto the griddle; it should sizzle gently.
- Pour ¼ cup of batter onto the hot griddle for each pancake. Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface of the pancake.
