Ingredients:

  • 1 cup (120g) all-purpose flour (plain flour)
  • 2 teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 tablespoon granulated sweetener (e.g., Stevia, Erythritol)
  • 1 medium ripe banana, mashed well
  • 1 large egg
  • ¾ cup (177ml) unsweetened almond milk
  • 1 teaspoon vanilla extract
  • Non-stick cooking spray

Instructions:

  1. In a large bowl, whisk together the flour, baking powder, cinnamon, salt, and sweetener.
  2. In a separate bowl, mash the banana until smooth.
  3. Add the egg, almond milk, and vanilla extract to the mashed banana and whisk until well combined.
  4. Pour the wet ingredients into the dry ingredients and gently whisk until just combined. Do not overmix. A few lumps are okay.
  5. Heat a lightly oiled griddle or non-stick frying pan over medium heat. Test the heat by dropping a small amount of batter onto the griddle; it should sizzle gently.
  6. Pour ¼ cup of batter onto the hot griddle for each pancake. Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface of the pancake.
