Ingredients:
- 12 ounces (340g) penne pasta
- 1 tablespoon olive oil
- Salt, to taste
- 1 pint cherry tomatoes (about 2 cups)
- 1 block (8 ounces / 225g) feta cheese
- 4 cloves garlic, minced
- ½ teaspoon red pepper flakes (adjust to taste)
- 1 teaspoon dried oregano
- Fresh black pepper, to taste
- 2 tablespoons fresh basil, chopped (plus more for garnishing)
- 1 tablespoon lemon juice (optional)
Instructions:
- Preheat your oven to 400°F (200°C).
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a baking dish, combine cherry tomatoes, feta cheese, minced garlic, red pepper flakes, oregano, olive oil, and black pepper. Mix well.
- Place the baking dish in the oven and roast for 25 minutes, or until the tomatoes burst and the feta is golden.
- Remove from the oven and stir in the cooked pasta. If desired, add lemon juice for a zesty kick.
- Garnish with fresh basil and enjoy immediately.
