Ingredients:

  • 12 ounces (340g) penne pasta
  • 1 tablespoon olive oil
  • Salt, to taste
  • 1 pint cherry tomatoes (about 2 cups)
  • 1 block (8 ounces / 225g) feta cheese
  • 4 cloves garlic, minced
  • ½ teaspoon red pepper flakes (adjust to taste)
  • 1 teaspoon dried oregano
  • Fresh black pepper, to taste
  • 2 tablespoons fresh basil, chopped (plus more for garnishing)
  • 1 tablespoon lemon juice (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  3. In a baking dish, combine cherry tomatoes, feta cheese, minced garlic, red pepper flakes, oregano, olive oil, and black pepper. Mix well.
  4. Place the baking dish in the oven and roast for 25 minutes, or until the tomatoes burst and the feta is golden.
  5. Remove from the oven and stir in the cooked pasta. If desired, add lemon juice for a zesty kick.
  6. Garnish with fresh basil and enjoy immediately.
